2003 Stephanies Dream Cabernet Sauvignon
Tasting Notes
This is a very complex wine with licorice, leather, olives and rosemary leading onto ripe red fruits and a hint of an earthy note on the nose, giving the wine quite a European accent. The palate is rich and full-bodied with a firm but not aggressive tannin backbone giving a dry savoury edge to the elegant ripe fruit on the palate.
Food Suggestions: It would be near perfect with roast spring lamb scented with rosemary.

| 2003 was a hot and dry year in the Yarra Valley which proved a great year for Cabernet Sauvignon in the Yarra Valley. The extremely low yield resulted from early season frost and ensured that the grapes ripened early with good acid but intense fully ripe flavours. |

The Cabernet was fermented in stainless steel with maceration periods ranging from 24 days to 31 days. All batches were made using whole berry maceration and pumping over daily.
