Tasting Notes
This wine is deep, dark and concentrated. It has amazing depth, intensity and balance on the nose with liquorice, spice, and dark ripe plums supported by charred oak nuances. The palate has great ripe fruit power but still retains balance with an integrated backbone of firm tannin and a savoury earthy complexity supported by abundant acidity.
Food Suggestions: Match it with game meat like venison or kangaroo.

Grapes were grown on our cool elevated site near Whittlesea. After rain in early March, the 2005 autumn provided weeks of consistent sunny, mild days allowing ideal slow steady ripening. These conditions ensured full ripeness of the grapes and pips, great concentration of colour and the full retention of merlot?s varietal character and perfume. To maximise quality an initial harvest of any bunches which were not perfect was undertaken and held separately before a second harvest of grapes in ideal condition was made. Only grapes from the second harvest was used in this wine. |

| The Morpheus Merlot has been made from a selection of the three most outstanding barrels of an outstanding Merlot vintage in 2005. These barrels were selected because they showed a combination of perfume, fruit concentration, mid palate power and the tannins and acid to give them a backbone that will support extended ageing, that together made this a complete wine. |
