Tasting Notes
This wine is very complex with concentrated juicy plums and dark cherry, hints of smoky bacon and integrated charred oak on the nose. A velvety mid palate texture gives way to tingling acidity and soft but persistent tannins.
Food Suggestions: Ideal to serve with the finest rare roasted and peppered joint of beef.

| Shiraz is sourced from the Cambrian soils of Northern Heathcote. The cool dry autumn in Heathcote in 2005 lead to grapes with more pronounced tannin and better acid than 2004 resulting in fruit which is more elegant and has the structure to age extremely well. |

Vinification Details

| Shiraz and Viognier were co-fermented to achieve seamless integration of their flavours and aromas. Final blending limited the Viognier to 1% to ensure Viognier played only a subtle and supporting role in the blend. Cabernet was added to enhance the tannin structure of the wine. |

Fruit was fermented with whole berry maceration for 20 days with hand plunging.
40% was fermented in Open Wood Vats and 60% in Stainless Steel.
