Tasting Notes
This is an elegant and yet complex wine showing minerals, grapefruit, lemon and hints of stone fruits interwoven with subtle nuances of smokey oak. The finish is long with crisp acidity.
Food Suggestions: Ideal with a variety of fish and poultry dishes with a sweet tasting fish like Barramundi a superb match to the wine.

| 2007 was a hot dry year resulting in the earliest harvest on record at our Whittlesea vineyard. Given the warm year the fruit was picked at lower Beaume than in previous years to maximise natural acid and elegance in the final wine. |

| Given the tight structure and elegance of the wine it was held on lees for 12 months and received battonage to enhance texture and complexity. The solids ferment component was included to add subtle sulphides character to the wine. |
