This wine shows a complex nose of ripe cherries, plums, rhubarb and violets. The palate is juicy yet savoury with complex ripe red fruits supported by integrated spicy oak, with fine tannins and a long crisp finish.

25% whole bunch, processed in small batches with a period of cold soak (one week) and then fermented using wild yeast in small wooden 300 year old fermenter . Piaged 2-3 times per day, received one week postmaceration ferment. Pressed without settling into barrels and left to mature for 12 months. |
